Wow, Incredibly Sharp, comfortable and well balanced
I am no pro chef or even a amature one by my account but, i do know knives and my kitchen knives i currently use are pretty darn sharp and do well with any kitchen task. I use a heavy 10″ chef knife for tougher food like carrots and i have a lighter and thinner Chef knife for delicate fine dicing, chiffon’s, garlic or anything i want to be quick and precise with. I have been looking for a newer more modern set but i have been on the fence.Enter the HOSHANHO 16-piece Kitchen Knife Set! Wow, just AMAZING!!Very well packed with blade protection for shipping. Aesthetically pleasing with a combination of American and Japanese styling. The belly of the Santoku and Chef knives have less curve than American and more than Japanese styles and they all have the vertical grooves like Santokus do for easy release of food. A 15 degree blade angle is quite thin and sharp, only time will tell about its ability to hold an edge which is why i usually use 17-20 degrees. But, these are SHARP!!!My opinion of what i look for in a knife is the Handle, Tang, Balance, Sharpness, Control, and Weight. I will assign “*s” next to each of my criteria below, 1-5 *’s****The Handle: I like finger grooves on my handles, these do not have them, they are straight which i thought would be uncomfortable. WRONG – They are super comfortable and allow for any grip style easily. They do not slip or even feel like they will, in fact i hardly even notice them. 4 stars as i am still getting used to them and they go against my preference but its a personal opinion.*****Sharpness: These are scalpel sharp, like surgical sharp.. I can sharpen knives well, i can shave my arm with a pocket knife but these cut though food like the proverbial “Hot knife through butter” – I barely feel any resistance though carrots, celery, apples, potatoes and meats. I am truly at awe at the sharpness. These are by far the sharpest knives i have ever used, and i have used a lot!!*****Tang: These appear to have a Full Tang which is most ideal for strength, and has a nice and thick bolster which i like. 5 stars*****Balance: This was just impressive, these are one of the most balanced knives i have ever used. They actually feel like an extension of my hand – 5 stars as this is super important for long sessions in the kitchen. Fatigue causes accidents.*****Weight: I’d call these middle weight, not too heavy to fatigue you and not too light that you can’t feel where the blade is. This is tightly intertwined with the Balance – 5 Stars as they achieved an equilibrium.*****Control: In tandem with Balance and Weight you get Control. Control is the feeling or intuition of where the blade is in space. With enough weight to feel it and proper balance you can achieve amazing control of the blade though all your kitchen tasks no matter what food product you are working with. 5 stars as i can feel exactly where the blade is and i can repeat the process over and over without fatigue.Lastly, the Kitchen Shears – They feel like pruning shears you’d use in the garden. They have a locking mechanism which is quite good but the spring tension it a bit on the heavy side. I feel like you will get fatigued if you use them for long periods. My hands are thick but on the smaller side for a male’s hand and they just about reach my limit when opened. But, I can see how they can actually reduce fatigue as you do not need to use any force to open them, just to close/cut which is something i’ve never experienced.What i was not fond of….. was the block, the steak knives are a little awkward to place and i don’t care for the sideways insertion of the larger blades, though… it is a good system to preserve the edge as it is not dragging on the wooden block when you draw the blade or sheath it, so you won’t dull the blade. I just feel like they could have designed it a little better, rather have seen all blade facing the same way vs all blade facing in. You can do it but, it messes with the aesthetics of the knife set in the block.

Awesome knives!
Awesome set! Sharpest set of knives I’ve ever had hands down. The build quality real wood grips and full tang is really nice. I’ve got large hands and these cut well and I don’t punch the cutting board like with some other knives which is a real plus. Just super comfortable.

Extremely sharp and comfortable to use. Only negative is that the knife block should have metal pockets for the knives. The knives will start cutting away at the pockets.

Beautiful and VERY Sharp
This is an extremely nice knife set. I have a set of semi high end knifes that were pretty pricey in my book. Over the years they have gotten knicks in the blade. I do not know how and I am an amateur cook. Anyway this is the only knife set I have to compare to these Hoshanho’s. First of all these are super sharp. So sharp they scare me. My sister recently ended up at minor emergency after her husband sharpened their knives. So that being said if you want some sharp knives get these. I don’t know how they can be sharper than our Heinkel’s were when we they were new but they seem sharper. Maybe because these have a heavier blade. The handle of these knives fits better. They are designed to balance nicely and fit better into the way your hand curves. The handles look nicer. The wooden block that comes with these is very nice but make sure you get the knives in the right slot or they will stick out the bottom. I actually scratched the countertop. It comes with instructions on were each knife goes but it’s just measurements no photo and it’s in centimeters. I am impressed and pleased with this lovely set.

beautiful set, a few imperfections
This set is really great. All blades are sharp and each piece looks nice and came individually wrapped. However, there’s a few imperfections I found. In a few spots along the blade near the tang, there’s what looks like extra metal bumps. It’s only on a few knifes and doesn’t necessarily affect functionality, but I’ve never seen this on a knife before and given the price point, it’s unacceptable. I’m keeping this one, but this would make a fantastic housewarming gift.
